The Classic Kerala style Eshtew

 

The classic Kerala style vegetable Stew or rather Eshtew. This mildly flavored coconut based dish is one of the most favorite quick meals the family enjoys. Serve hot with fermented Rice Appams, Malabar Parottas or Ghee Rice.
Either ways, they are finger licking good and so light and fresh on the tummy.

RECIPE

INGREDIENTS

  • 1-2  Tbsp Virgin Cold Expressed Coconut Oil

  • 1 Large Red Onlon chopped (Optional for Saatvik version)

  • 1 Tbsp grated Ginger

  • 1/2 Tbsp crushed Garlic (Optional for Saatvik version)

  • 10-12 fresh Curry Leaves

  • 2 Green Chillies slit

  • 1/4 tsp Peppercorns

  • Few - Cloves, Cardamom and a piece of Cinnamon

  • 1/4 tsp Fennel Seeds

  • 1 Large Carrot chopped

  • 2 handfuls Green Beans chopped

  • 2 large Russet Potatoes chopped

  • 1/4 Cauliflower in florets

  • 1/2 cup Tender Fresh Green Peas

  • 8-10 Mushrooms chopped (Optional)

  • Salt to taste

  • 1 Cup Thick Coconut Milk.


    METHOD

    Heat Oil. Add Whole Spices. When they start to sizzle add Curry leaves and Onions.
    Fry Onions only till glassy. Add Ginger and Garlic with Green Chillies.
    Add all the Vegetables except Peas. Add salt to taste.
    Mix, cover, and cook for 10 minutes.
    Add Peas and Coconut Milk.
    Simmer till all vegetables are cooked well but not overdone.

    Serve hot.
