Pav Bhaji - Mumbai Hawker's Spiced Veg Mash
Standing in front of the fridge with the ever-dreaded question of what to make today.
You find a bunch of assorted vegetables but not enough of one to make a full dish.... What do you do?
You turn on your favorite Bollywood music on loud and take inspiration from the Mumbaiwala street hawkers of course!!
PAV BHAJI
Bhaji - A finger licking mash of spiced veggies served hot with raw onions, a good squeeze of lime, and yes that dollop of salted butter - a must!
Pav- Buttered toasted Bread Rolls.
A one pot all veggie delight that even the kids are happy to eat! Although...it isn’t a must that you proactively share all the 'healthy' ingredients that went into it.
I do feel a wee bit evil. ;)) But not really.
RECIPE
FOR BHAJI
INGREDIENTS
2 Tbsps butter
1 Large Red Onlon chopped
5-6 Large Tomatoes (finely chopped) or small can Tomato Paste
1 Small Bell Pepper
2 Large Russet Potatoes Boiled
Handful of Boiled Green Beans
My healthy version with what I had in my fridge (These are not a part of my original recipe) - I had a chunk of Bottle Gourd, 1 small Zuchini, and a handful of Radish greens and so added that too! Also a tsp of Amla and a good dash of Aloe Vera juice (its tasteless)
1 Chopped Boiled Carrot
A few Cooked Cauliflower Florets
(Boil all Vegetables together)1 Tbsp Ginger- Garlic Paste
2 Green Chillies
Salt to taste
PAV BHAJI MASALA - Recipe Below.GARNISH
Coriander leaves (finely chopped)
Lemon/Lime Quarters
Finely chopped Red Onion
METHODMelt Butter. Fry Onions till glassy. Add Ginger Garlic Paste with Green Chillies.
Add Tomatoes. Cover. Cook till it all comes together well.
Add Pav Bhaji Masala. Fry for a few minutes till fragrant.
Add all the soft boiled vegetables. Mix well and mash with masher.
Add Salt to taste.
FOR PAV - BREAD ROLLS
4 tsp Butter
Butter and toast the Pav/Bread Rolls.
SERVE HOT Bhaji with a generous dollop of salted butter and garnish on top.
PAV BHAJI MASALA
Buy ready-made from an Indian Store or Make your own.
Roast the ingredients below lightly and powder them in a coffee grinder. Store in an airtight container in the fridge.
10 Cloves / Lavang
2 Cardamom / Elachi
2 Inch Cinnamon stick / Dalchini
1 Tbsp Peppercorns / Kalimirch
¾ Tbsp Fennel / Saunf - Badishep
4 Tbsp coriander seeds / Dhaniya Seeds
2 Tbsp cumin seeds / Jeera
1 Tbsp dry mango powder / Amchur powder
2 Bay leaf / Tejpatta
4 Tbsps Dried Fenugreek Leaves/Kasoori Methi
3 Tbsps dried Kashmiri Red Chili / Laal Mirchi
1 tsp Turmeric powder / Haldi
